This week we harvested some fresh greens from our Garden Bed Hoop House to make some homemade Minestrone. YUM! We will enjoy the leftovers today, perfect timing with the February snowstorm headed our way.
It's true, greens like kale, spinach, tatsoi, bok choi, celery, parsley, green onions, and chard all grow in our Colorado winter months if protected in a small Hoop House! It's a great way to have organic, pesticide-free greens for enjoying all winter long without any added heat. February is the time where a lot of these veggies will really start growing after a period of slow growing during the shortest days of December and January. As the days grow longer, the greens in Hoop Houses really take off so you'll have an abundance of vegetables to harvest much earlier than other uncovered Colorado gardens.
Our Hoop Houses work just like miniature greenhouses, and you can also use them to start seeds, as well as harden off summer vegetables in the early spring. We like to put containers and start lettuce seeds in them to put on our patios once the weather warms more in March and April. These sugar snap peas below were started in our hoop house, and we can transplant them elsewhere in the garden once spring arrives. You can also snack on the pea shoots, they taste just like peas!
